Kendo tournaments are typically either run as a single elimination bracket, or round robin. These work the same as they do for other sports (ie. basketball).

As far as how they get seeded, the way I have seen it done is via random drawing, and then tweaked afterwards to keep dojo mates from all being in the same bracket/pool.
